- 4 bone-in, skin-on chicken thighs
- 1 cup heavy cream or sour cream (or Greek yogurt as a substitute)
- 3 cloves garlic, minced
- 1 onion, diced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon fresh parsley, chopped (for garnish)
- Salt and pepper to taste
- 1 teaspoon paprika
- Olive oil for searing
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the chicken thighs dry and season both sides with salt, pepper, and herbs.
- In an oven-safe skillet over medium-high heat, add olive oil and sear the thighs for 4-5 minutes on each side until golden brown.
- Remove the skillet from heat and set chicken aside. In the same skillet, sauté garlic and onion until fragrant.
- Add chicken broth, simmer for a couple of minutes, then stir in heavy cream and scrape the bottom for flavor.
- Nestle chicken thighs back into the skillet and spoon sauce over them.
- Bake in the oven for 25-30 minutes, or until cooked through (internal temperature of 165°F or 75°C).
- Garnish with chopped parsley and serve.
Notes
Serve with sides like mashed potatoes or green beans. Adjust herbs to your preference.
