  • 4 bone-in, skin-on chicken thighs
  • 1 cup heavy cream or sour cream (or Greek yogurt as a substitute)
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • Olive oil for searing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken thighs dry and season both sides with salt, pepper, and herbs.
  3. In an oven-safe skillet over medium-high heat, add olive oil and sear the thighs for 4-5 minutes on each side until golden brown.
  4. Remove the skillet from heat and set chicken aside. In the same skillet, sauté garlic and onion until fragrant.
  5. Add chicken broth, simmer for a couple of minutes, then stir in heavy cream and scrape the bottom for flavor.
  6. Nestle chicken thighs back into the skillet and spoon sauce over them.
  7. Bake in the oven for 25-30 minutes, or until cooked through (internal temperature of 165°F or 75°C).
  8. Garnish with chopped parsley and serve.
