- 4 bone-in or boneless pork chops
- 3 tablespoons butter
- 1 cup heavy cream
- 2 tablespoons freshly cracked peppercorns
- 3 cloves garlic, minced
- 1 cup chicken or vegetable broth
- Fresh herbs (like thyme or parsley)
Instructions
- Season pork chops generously with salt and freshly cracked pepper. Let sit at room temperature for 30 minutes.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the pork chops for 4-5 minutes on each side until golden brown. Transfer to a plate to keep warm.
- Add remaining tablespoon of butter to the skillet. Reduce heat to medium, add minced garlic and sauté for about 30 seconds.
- Pour in the broth and scrape up the brown bits from the skillet.
- Add the heavy cream and let simmer for 2-3 minutes. Stir in more cracked pepper to taste.
- Return the pork chops to the skillet and simmer for an additional 5 minutes, allowing the sauce to thicken.
- Garnish with fresh herbs and serve immediately over mashed potatoes or with crusty bread.
Notes
For a lighter version, substitute half and half for heavy cream. Chicken breasts can be used instead of pork chops.
