Description

Tender pork chops smothered in a rich, creamy peppercorn sauce that offers a delightful contrast of flavors.


Ingredients

  • 4 bone-in or boneless pork chops
  • 3 tablespoons butter
  • 1 cup heavy cream
  • 2 tablespoons freshly cracked peppercorns
  • 3 cloves garlic, minced
  • 1 cup chicken or vegetable broth
  • Fresh herbs (like thyme or parsley)

Instructions

  1. Season pork chops generously with salt and freshly cracked pepper. Let sit at room temperature for 30 minutes.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the pork chops for 4-5 minutes on each side until golden brown. Transfer to a plate to keep warm.
  3. Add remaining tablespoon of butter to the skillet. Reduce heat to medium, add minced garlic and sauté for about 30 seconds.
  4. Pour in the broth and scrape up the brown bits from the skillet.
  5. Add the heavy cream and let simmer for 2-3 minutes. Stir in more cracked pepper to taste.
  6. Return the pork chops to the skillet and simmer for an additional 5 minutes, allowing the sauce to thicken.
  7. Garnish with fresh herbs and serve immediately over mashed potatoes or with crusty bread.

Notes

For a lighter version, substitute half and half for heavy cream. Chicken breasts can be used instead of pork chops.
