Ingredients

- 3 leeks, washed and sliced
- 4 Yukon Gold potatoes, peeled and chopped
- 2 cloves of garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Fresh thyme or dill (to taste)
- Salt and pepper (to taste)
Instructions
- Prepare the Ingredients: Wash and slice your leeks, peel and chop your potatoes.
- Sauté the Leeks and Garlic: In a large pot, melt butter over medium heat. Add leeks and cook until soft, about 5–7 minutes. Add garlic and sauté for 1 minute.
- Add the Potatoes and Broth: Stir in chopped potatoes, then pour in broth. Bring to a boil, reduce to a simmer, cover and cook for 15–20 minutes until potatoes are tender.
- Blend for Creaminess: Use an immersion blender to puree the soup to your desired consistency.
- Incorporate Cream and Herbs: Stir in cream and fresh herbs, heat through, then season with salt and pepper.
- Serve and Enjoy: Ladle soup into bowls, garnish with chives or parsley, and serve with crusty bread.
Notes
Experiment with adding sautéed mushrooms or different herbs to customize the flavor.
