Description

A warm and comforting soup that combines sweet leeks and buttery potatoes, perfect for chilly evenings.


Ingredients

  • 3 leeks, washed and sliced
  • 4 Yukon Gold potatoes, peeled and chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Fresh thyme or dill (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the Ingredients: Wash and slice your leeks, peel and chop your potatoes.
  2. Sauté the Leeks and Garlic: In a large pot, melt butter over medium heat. Add leeks and cook until soft, about 5–7 minutes. Add garlic and sauté for 1 minute.
  3. Add the Potatoes and Broth: Stir in chopped potatoes, then pour in broth. Bring to a boil, reduce to a simmer, cover and cook for 15–20 minutes until potatoes are tender.
  4. Blend for Creaminess: Use an immersion blender to puree the soup to your desired consistency.
  5. Incorporate Cream and Herbs: Stir in cream and fresh herbs, heat through, then season with salt and pepper.
  6. Serve and Enjoy: Ladle soup into bowls, garnish with chives or parsley, and serve with crusty bread.

Notes

Experiment with adding sautéed mushrooms or different herbs to customize the flavor.
