Instructions
- Prep the ingredients: Wash, peel, and chop the potatoes. Dice the onion and mince the garlic. Slice the sausage.
- Sauté the vegetables: Heat olive oil in a large pot over medium heat, add onion and sauté until translucent, about 5 minutes. Add garlic and sauté for an additional minute.
- Brown the sausage: Add the sausage to the pot, cooking until browned.
- Add the potatoes and broth: Stir in the potatoes and broth, bring to a gentle boil, then reduce heat to simmer for 15-20 minutes.
- Make it creamy: Once potatoes are tender, stir in heavy cream and season with salt, pepper, and paprika if desired.
- Finish with herbs: Stir in fresh herbs just before serving.
- Serve and enjoy!: Ladle into bowls and serve with crusty bread or crackers.
Notes
For a lighter version, use half-and-half or coconut milk. Reserve some fresh herbs for garnish to enhance the dish visually.
