Description

A hearty and comforting chowder combining creamy potatoes and savory sausage, perfect for chilly days.

Ingredients

Scale
  • 1 lb sausage (Italian or breakfast sausage)
  • 4 medium Russet or Yukon Gold potatoes, diced
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream or half-and-half
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onions and minced garlic, cooking until the onions are translucent.
  2. Add sausage to the pot, breaking it apart with a wooden spoon. Cook until browned.
  3. Toss in diced potatoes, carrots, and celery, stirring to combine. Cook for a few minutes until they begin to soften.
  4. Add broth, ensuring it covers the vegetables. Bring to a gentle simmer and cook until potatoes are tender, about 15-20 minutes.
  5. Lower the heat, stir in the cream, and allow it to meld into the mixture.
  6. Add salt, pepper, and chopped herbs to taste.
  7. Ladle chowder into bowls, garnishing with fresh parsley if desired.

Notes

Allow chowder to rest for a few hours or overnight in the fridge for deeper flavors.
