- 4 medium Russet or Yukon Gold potatoes, diced
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream or half-and-half
- 1 cup celery, diced
- 1 cup carrots, diced
- 2 teaspoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped

Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onions and minced garlic, cooking until the onions are translucent.
- Add sausage to the pot, breaking it apart with a wooden spoon. Cook until browned.
- Toss in diced potatoes, carrots, and celery, stirring to combine. Cook for a few minutes until they begin to soften.
- Add broth, ensuring it covers the vegetables. Bring to a gentle simmer and cook until potatoes are tender, about 15-20 minutes.
- Lower the heat, stir in the cream, and allow it to meld into the mixture.
- Add salt, pepper, and chopped herbs to taste.
- Ladle chowder into bowls, garnishing with fresh parsley if desired.
