- 2 lbs Yukon Gold or Russet potatoes, peeled and cubed
- 1 medium yellow onion, chopped
- 3 cloves fresh garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Optional: sautéed mushrooms, leeks, celery, or carrots
Instructions
- Prep the ingredients: peel and cube the potatoes, roughly chop the onion, and mince the garlic.
- Sauté the onion and garlic in a large pot with a few tablespoons of butter over medium heat until translucent, about 5 minutes.
- Add the potatoes and broth to the pot. Bring to a gentle boil, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
- Using an immersion blender, puree the soup directly in the pot or transfer batches to a traditional blender until smooth and creamy.
- Stir in the heavy cream, season with salt, pepper, and herbs. Allow to meld on low heat for a few minutes.
- For optional sautéed mushrooms, cook them separately in butter until golden brown, then stir into the soup before serving.
Notes
For a lighter version, you can substitute heavy cream with Greek yogurt or cashew cream. Fresh herbs are essential for enhancing the flavor.
