- 8 ounces cream cheese, softened
- 4–5 cloves garlic, minced
- 1 onion, diced (yellow or white)
- 4 cups chicken broth
- 1 teaspoon fresh thyme or rosemary
- Salt and pepper to taste
- 1–2 cups fresh vegetables (spinach or cauliflower)
Instructions
- Place the boneless chicken in the slow cooker.
- In a bowl, mix the softened cream cheese, minced garlic, and diced onion.
- Pour the chicken broth over the chicken and cream cheese mixture.
- Add herbs, salt, and pepper to taste.
- Secure the lid and cook on low for 6-7 hours or high for 3-4 hours.
- Shred the chicken in the slow cooker and add your chopped vegetables, cooking for another 15-20 minutes.
- Taste and adjust seasoning as needed.
