- 8 oz cream cheese, cubed
- 4 cups chicken broth
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp fresh thyme or parsley
- Salt to taste
- Pepper to taste
- Optional: pinch of red pepper flakes
Instructions
- Chop the onion, garlic, carrots, and celery.
- Add the diced chicken to the slow cooker followed by the chopped vegetables.
- Pour in the chicken broth.
- Place the cream cheese cubes on top without stirring.
- Sprinkle in the garlic, herbs, salt, and pepper.
- Cook on low for 6-8 hours or on high for 4 hours.
- About 30 minutes before serving, stir to incorporate the cream cheese fully.
- Adjust seasoning if necessary and serve hot.
Notes
For a vegetarian version, substitute chicken with tofu and cream cheese with sour cream. You can also add vegetables like spinach or cauliflower.
