Instructions
- Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about a cup of pasta water, then drain the spaghetti and set it aside.
- Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic, and sauté until fragrant and golden, about 1 minute.
- Prepare the Sauce: Slowly pour in the heavy cream, stirring gently until it begins to simmer. Add the grated Parmesan cheese, mixing until melted and creamy. Adjust consistency with reserved pasta water if necessary.
- Add Spinach and Tomatoes: Toss in the fresh spinach and sun-dried tomatoes. Stir until the spinach wilts, about 2-3 minutes.
- Combine with Spaghetti: Add the cooked spaghetti into the skillet, tossing everything together until well-coated in the creamy sauce.
- Season and Serve: Taste for seasoning and add salt and pepper as needed. Garnish with fresh herbs or a squeeze of lemon juice if desired.
