Ingredients

  • 1 Spaghetti Squash
  • 8 oz Cremini or Shiitake Mushrooms, sliced
  • 1 cup Heavy Cream (or half-and-half for lighter option)
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Gruyère cheese, shredded (or cheddar as a substitute)
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Thyme or Rosemary, chopped (or dried herbs)
  • 2 tbsp Butter
  • Salt and Pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, scoop out seeds, drizzle with olive oil, salt, and pepper. Roast cut side down for about 40 minutes until tender.
  2. Melt 1 tbsp of butter in a skillet over medium heat, add sliced mushrooms, and sauté until golden, about 5–7 minutes. Add minced garlic and cook for an additional minute.
  3. In a saucepan, combine heavy cream and remaining 1 tbsp of butter over low heat. Stir in cheeses until melted and smooth, then season with salt, pepper, and herbs.
  4. Once the squash is cool enough to handle, scrape out strands and transfer to a mixing bowl. Fold in sautéed mushrooms and cheese sauce until well coated.
  5. Transfer mixture to a greased baking dish, sprinkle additional cheese and breadcrumbs on top if desired.
  6. Bake in the oven for 20 minutes or until bubbly and golden.
  7. Let cool for a few moments before serving warm, garnished with fresh herbs or a drizzle of olive oil.

Notes

The dish can be made lighter by using plant-based milk and nutritional yeast instead of cheese or adding cooked sausage or chicken for extra protein.
