- 1 Spaghetti Squash
- 8 oz Cremini or Shiitake Mushrooms, sliced
- 1 cup Heavy Cream (or half-and-half for lighter option)
- 1 cup Mozzarella cheese, shredded
- 1 cup Gruyère cheese, shredded (or cheddar as a substitute)
- 2 cloves Garlic, minced
- 1 tbsp Fresh Thyme or Rosemary, chopped (or dried herbs)
- 2 tbsp Butter
- Salt and Pepper to taste
- Breadcrumbs for topping (optional)
Instructions
- Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise, scoop out seeds, drizzle with olive oil, salt, and pepper. Roast cut side down for about 40 minutes until tender.
- Melt 1 tbsp of butter in a skillet over medium heat, add sliced mushrooms, and sauté until golden, about 5–7 minutes. Add minced garlic and cook for an additional minute.
- In a saucepan, combine heavy cream and remaining 1 tbsp of butter over low heat. Stir in cheeses until melted and smooth, then season with salt, pepper, and herbs.
- Once the squash is cool enough to handle, scrape out strands and transfer to a mixing bowl. Fold in sautéed mushrooms and cheese sauce until well coated.
- Transfer mixture to a greased baking dish, sprinkle additional cheese and breadcrumbs on top if desired.
- Bake in the oven for 20 minutes or until bubbly and golden.
- Let cool for a few moments before serving warm, garnished with fresh herbs or a drizzle of olive oil.
Notes
The dish can be made lighter by using plant-based milk and nutritional yeast instead of cheese or adding cooked sausage or chicken for extra protein.
