Description

A comforting dish of creamy orzo pasta with fresh spinach and Parmesan cheese, perfect for any occasion.

Ingredients

Scale
  • 1 cup orzo
  • 2 cups fresh spinach (or kale or Swiss chard)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy cream (or half-and-half or coconut cream)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced (or garlic powder)
  • 2 cups vegetable or chicken broth

Instructions

  1. Heat the butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Stir in the orzo and toast lightly for 1 minute.
  3. Pour in the broth and bring to a gentle simmer. Cook for 10-12 minutes until the orzo is al dente.
  4. Lower the heat and stir in the heavy cream, incorporating it fully before adding the spinach.
  5. Add spinach gradually, mixing until it wilts down. Stir in the grated Parmesan cheese until melted.
  6. Taste and adjust seasonings as needed. Serve hot, garnished with extra Parmesan and a squeeze of lemon.

Notes

Stir regularly to prevent orzo from sticking. Adjust cream levels for desired richness.
