- 1 cup heavy cream (or half-and-half or coconut cream)
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced (or garlic powder)
- 2 cups vegetable or chicken broth
Instructions
- Heat the butter in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Stir in the orzo and toast lightly for 1 minute.
- Pour in the broth and bring to a gentle simmer. Cook for 10-12 minutes until the orzo is al dente.
- Lower the heat and stir in the heavy cream, incorporating it fully before adding the spinach.
- Add spinach gradually, mixing until it wilts down. Stir in the grated Parmesan cheese until melted.
- Taste and adjust seasonings as needed. Serve hot, garnished with extra Parmesan and a squeeze of lemon.
