- 1/4 cup dry white wine (like Sauvignon Blanc)
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions
- Season the chicken with salt and pepper. In a large skillet over medium heat, melt one tablespoon of butter. Add the chicken pieces and cook until golden brown on both sides (about 5–6 minutes per side). Remove from skillet and set aside.
- In the same skillet, add another tablespoon of butter. Sauté the diced onions and minced garlic until softened, about 3 minutes. Stir in the chopped tarragon.
- Pour in the white wine, scraping up brown bits from the skillet. Let it reduce for one minute.
- Lower the heat and stir in the heavy cream and chicken broth, bringing to a gentle simmer. Return the chicken to the skillet and cook in the sauce until it reaches an internal temperature of 165°F (about 10 minutes).
- Taste and adjust seasoning as necessary. Serve the creamy sauce over the chicken with a sprinkle of fresh herbs for garnish, if desired.
