Ingredients

  • Fettuccine pasta (or spaghetti/linguine)
  • 1 cup Heavy Cream
  • 34 cloves Garlic, minced
  • 4 tablespoons Unsalted Butter
  • 1/2 cup Sun-Dried Tomatoes, chopped
  • 2 cups Fresh Spinach
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 cup White Wine
  • Fresh Herbs (Basil and Parsley)

Instructions

  1. Cook the pasta in salted water until al dente, reserving about a cup of pasta water.
  2. In a large skillet, melt butter over medium heat and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and fresh spinach, stirring until the spinach wilts.
  4. Add fresh lobster, cooking until it turns opaque (4-5 minutes).
  5. Pour in white wine and let bubble for a couple of minutes.
  6. Add heavy cream and simmer until slightly thickened.
  7. Combine the cooked pasta with the sauce, using reserved pasta water if necessary.
  8. Stir in Parmesan and fresh herbs, adjust seasoning, and serve warm.
