  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (or vegan butter)
  • 3 large eggs (or flax eggs/applesauce)
  • 1 cup heavy cream (or coconut cream)
  • 1 cup toasted pecans, chopped (or sunflower seeds)
  • 1 tsp vanilla extract (or almond extract)
  • 1 cup brown sugar (or coconut sugar)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan, lining the bottom with parchment paper.
  2. In a skillet over low heat, toast the chopped pecans for 5–7 minutes until aromatic. Set aside to cool.
  3. In a mixing bowl, cream the butter and sugar until light and fluffy (3–5 minutes).
  4. Add the eggs, one at a time, mixing well after each addition. Blend in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mix to the wet mixture, alternating with the heavy cream, mixing gently until just combined.
  6. Fold in the toasted pecans.
  7. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  8. Cool the cake in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  9. For the caramel topping, combine brown sugar and water in a saucepan, boil without stirring until deep amber, and pour over the cooled cake.
  10. Let the caramel set for at least 30 minutes before serving.
