Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and lemon zest.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until combined, being careful not to overmix.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Scoop tablespoons of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Sprinkle a generous amount of granulated sugar on top of each ball of dough.
  8. Bake for 10-12 minutes or until the edges are lightly golden; the centers may look undercooked.
  9. Let cool for a few minutes on the baking sheets before transferring to a wire rack to cool completely.
