Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and lemon zest.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the wet ingredients until combined, being careful not to overmix.
- Chill the dough in the refrigerator for at least 30 minutes.
- Scoop tablespoons of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Sprinkle a generous amount of granulated sugar on top of each ball of dough.
- Bake for 10-12 minutes or until the edges are lightly golden; the centers may look undercooked.
- Let cool for a few minutes on the baking sheets before transferring to a wire rack to cool completely.
