- Eggroll wrappers

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine drained black beans, diced bell peppers, onions, and shredded cheddar cheese. Add spices and herbs if desired.
- Lay one eggroll wrapper on a clean surface and spoon about two tablespoons of filling onto the center. Fold the bottom corner over, then fold in the sides and roll tightly to seal.
- Place the eggrolls seam-side down on a greased baking sheet.
