- 2 cups fresh broccoli florets
- 2 medium Yukon Gold or Russet potatoes
- 2 cloves garlic, minced
- 1 cup panko breadcrumbs
- 1 large egg
- Salt, to taste
- Pepper, to taste
- Herbs (such as thyme or rosemary), optional
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop the broccoli into small florets; peel and dice the potatoes.
- Boil the diced potatoes in salted water for about 10-15 minutes until tender, then drain and cool slightly.
- In a large bowl, combine potatoes, broccoli, minced garlic, breadcrumbs, egg, salt, pepper, and preferred herbs. Mix until combined.
- Form the mixture into small patties, about two inches in diameter.
- Place bites on a greased baking sheet, ensuring space between them. Bake for 25-30 minutes, flipping halfway through, until golden brown.
- Let cool for a few minutes before serving warm with a dipping sauce of choice.
Notes
For an added cheesy flavor, sprinkle in grated Parmesan or nutritional yeast into the mixture.
