Description

Ingredients

  • 2 cups fresh broccoli florets
  • 2 medium Yukon Gold or Russet potatoes
  • 2 cloves garlic, minced
  • 1 cup panko breadcrumbs
  • 1 large egg
  • Salt, to taste
  • Pepper, to taste
  • Herbs (such as thyme or rosemary), optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the broccoli into small florets; peel and dice the potatoes.
  3. Boil the diced potatoes in salted water for about 10-15 minutes until tender, then drain and cool slightly.
  4. In a large bowl, combine potatoes, broccoli, minced garlic, breadcrumbs, egg, salt, pepper, and preferred herbs. Mix until combined.
  5. Form the mixture into small patties, about two inches in diameter.
  6. Place bites on a greased baking sheet, ensuring space between them. Bake for 25-30 minutes, flipping halfway through, until golden brown.
  7. Let cool for a few minutes before serving warm with a dipping sauce of choice.

Notes

For an added cheesy flavor, sprinkle in grated Parmesan or nutritional yeast into the mixture.
