Ingredients

- 2 boneless chicken breasts or thighs
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup freshly grated Parmesan cheese
- 2 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing (store-bought or homemade)
- 4 brioche buns
- Salt and pepper to taste
- Oil for frying
Instructions
- Season chicken with salt and pepper, then dredge in flour, dip in beaten eggs, and coat in breadcrumbs.
- Heat oil in a skillet over medium-high heat and fry chicken for 4-5 minutes on each side until golden brown, or bake at 400°F (200°C) for 20-25 minutes.
- While chicken is cooking, whisk together Caesar dressing ingredients.
- Toast buns and spread dressing generously on both sides. Layer crispy chicken, romaine lettuce, and additional Parmesan on the buns.
- Serve immediately with a side of fries or garlic mushrooms.
Notes
For a vegetarian option, substitute the chicken with crispy eggplant or portobello mushrooms. Store leftovers in an airtight container, keeping the chicken and dressing separate from the lettuce and bread.
