- 8 corn or flour tortillas
- 1 cup Monterey Jack or cheddar cheese, shredded
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin

- 1 tsp paprika
- 1/4 cup fresh cilantro, chopped
- Vegetable or canola oil (for frying or baking)
Instructions
- Cook the chicken: Heat oil in a skillet over medium heat. Add diced onion and sauté until translucent. Stir in minced garlic, then add the chicken, cilantro, and spices. Cook until chicken is done, about 8–10 minutes, then shred the meat.
- Assemble the taquitos: Warm the tortillas, place filling in each, sprinkle with cheese, and roll tightly.
- Fry or bake: Fry in hot oil until golden brown and crispy, about 2–3 minutes per side or bake at 400°F (200°C) for 15-20 minutes.
- Serve and enjoy: Allow to cool slightly and serve with toppings like salsa or sour cream.
Notes
