- 4 Fresh Cod Fillets
- 1 cup Panko Breadcrumbs
- ½ cup Freshly Grated Parmesan Cheese
- 3 cloves Garlic, minced
- 2 tablespoons Olive Oil
- Fresh Parsley or Dill, for garnish
- Lemon Wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the cod fillets dry with a paper towel.
- In a bowl, mix panko breadcrumbs, grated Parmesan cheese, minced garlic, salt, and pepper.
- Drizzle olive oil over the breadcrumb mixture.
- Dip each fillet in a bit of olive oil, then press into the breadcrumb mixture.
- Place breaded fillets on a parchment-lined baking sheet.
- Bake for 15-20 minutes until golden brown and cooked through (internal temperature should reach 145°F).
- Serve immediately with lemon wedges on the side.
Notes
Always ensure cod is dry before coating to achieve a nice crunch. Broil for the last minute for an extra golden crust.
