  • 4 Fresh Cod Fillets
  • 1 cup Panko Breadcrumbs
  • ½ cup Freshly Grated Parmesan Cheese
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Fresh Parsley or Dill, for garnish
  • Lemon Wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the cod fillets dry with a paper towel.
  3. In a bowl, mix panko breadcrumbs, grated Parmesan cheese, minced garlic, salt, and pepper.
  4. Drizzle olive oil over the breadcrumb mixture.
  5. Dip each fillet in a bit of olive oil, then press into the breadcrumb mixture.
  6. Place breaded fillets on a parchment-lined baking sheet.
  7. Bake for 15-20 minutes until golden brown and cooked through (internal temperature should reach 145°F).
  8. Serve immediately with lemon wedges on the side.
