Ingredients

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian herbs (dried basil and oregano)
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh parsley for garnish

Instructions

  1. Pound the chicken breasts to an even thickness, about ½ inch.
  2. Set up the breading station: One bowl with flour seasoned with salt and pepper, another with a whisked egg, and a third with panko, Parmesan, garlic powder, and herbs.
  3. Dredge each chicken cutlet in flour, dip it in the egg, and then coat it with the panko mixture.
  4. Heat olive oil in a large skillet over medium heat.
  5. Cook the cutlets in the skillet for 4-5 minutes on each side until golden brown and cooked through.
  6. Drain on paper towels and serve hot, garnished with fresh parsley.
