- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1/2 cup all-purpose flour

- 1 teaspoon Italian herbs (dried basil and oregano)
- Salt and pepper to taste
- Olive oil for frying
- Fresh parsley for garnish
Instructions
- Pound the chicken breasts to an even thickness, about ½ inch.
- Set up the breading station: One bowl with flour seasoned with salt and pepper, another with a whisked egg, and a third with panko, Parmesan, garlic powder, and herbs.
- Dredge each chicken cutlet in flour, dip it in the egg, and then coat it with the panko mixture.
- Heat olive oil in a large skillet over medium heat.
- Cook the cutlets in the skillet for 4-5 minutes on each side until golden brown and cooked through.
- Drain on paper towels and serve hot, garnished with fresh parsley.
