- 1 lb Brussels sprouts, trimmed and halved
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- Salt, to taste

Instructions
- Preheat the oven to 425°F (220°C).
- Rinse and trim the Brussels sprouts, slicing off the stem end and peeling any yellow leaves.
- In a large bowl, combine the Brussels sprouts, minced garlic, olive oil, salt, and pepper. Toss well to coat.
- Stir in the grated Parmesan cheese.
- Line a baking sheet with parchment paper and spread the Brussels sprouts in a single layer, cut side down.
- Roast in the oven for 20-25 minutes until golden brown and crispy, stirring halfway through.
- Serve immediately, optionally with a sprinkle of lemon juice or extra Parmesan.
Notes
For a vegan alternative, substitute Parmesan with nutritional yeast. You can also add fresh herbs like rosemary or thyme for extra flavor.
