  • 2 large sweet onions, sliced into thin rings
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs (or aquafaba for vegan option)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Olive oil, for drizzling or frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the onions into thin rings.
  3. Set up three bowls: one with flour, one with beaten eggs (or aquafaba), and one with panko, Parmesan, garlic powder, salt, and pepper.
  4. Dredge each onion ring lightly in flour, dip in the egg mixture, then coat in the breadcrumb mixture.
  5. Place coated rings on a baking sheet lined with parchment paper.
  6. Bake for about 20 minutes or until golden brown and crispy, flipping halfway through.
  7. Allow to cool slightly before serving.
