- 2 large sweet onions, sliced into thin rings
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 cup all-purpose flour
- 2 large eggs (or aquafaba for vegan option)
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Olive oil, for drizzling or frying
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and slice the onions into thin rings.
- Set up three bowls: one with flour, one with beaten eggs (or aquafaba), and one with panko, Parmesan, garlic powder, salt, and pepper.
- Dredge each onion ring lightly in flour, dip in the egg mixture, then coat in the breadcrumb mixture.
- Place coated rings on a baking sheet lined with parchment paper.
- Bake for about 20 minutes or until golden brown and crispy, flipping halfway through.
- Allow to cool slightly before serving.
Notes
Ensure to pat onions dry before coating for extra crispiness. Don’t overcrowd the baking sheet.
