Ingredients
Scale
- 2 starchy potatoes (Russets or Yukon Golds)
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup yellow onion, finely chopped
- Black pepper to taste
Instructions
- Peel and chop potatoes into chunks, then boil in salted water until fork-tender, around 15-20 minutes. Drain and cool.
- Mash the potatoes until smooth and creamy.
- Add sautéed onions, minced garlic, parsley, black pepper, and olive oil; mix well.
- Shape into balls, optionally stuffing with cheese or garlic butter.

- Cool slightly before serving with your favorite dipping sauce.
Notes
For a lighter option, substitute olive oil with avocado oil. Sweet potatoes can also be used for a different flavor.
