Description

These crispy potato balls are a delightful treat, made from simple ingredients and bursting with flavor without the need for frying.


Ingredients

  • 2 starchy potatoes (Russets or Yukon Golds)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup yellow onion, finely chopped
  • Black pepper to taste

Instructions

  1. Peel and chop potatoes into chunks, then boil in salted water until fork-tender, around 15-20 minutes. Drain and cool.
  2. Mash the potatoes until smooth and creamy.
  3. Add sautéed onions, minced garlic, parsley, black pepper, and olive oil; mix well.
  4. Shape into balls, optionally stuffing with cheese or garlic butter.
  5. Preheat oven to 375°F (190°C). Place potato balls on a baking sheet, drizzle with olive oil, and bake for 25-30 minutes until golden and crispy, flipping halfway through.
  6. Cool slightly before serving with your favorite dipping sauce.

Notes

For a lighter option, substitute olive oil with avocado oil. Sweet potatoes can also be used for a different flavor.
