Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
- Toss the sweet potato cubes with olive oil, sea salt, black pepper, garlic powder, and any chosen herbs in a bowl.
- Spread the cubes in a single layer on a parchment-lined baking sheet.
- Roast for 25-30 minutes, flipping halfway through until golden and tender.
- Let them rest for a few minutes before serving, and optionally sprinkle with lemon juice or extra herbs.
Notes
For extra crispiness, soak the sweet potato cubes in cold water for 30 minutes before drying and seasoning them. Avoid overcrowding the baking sheet to prevent steaming.
