Ingredients

  • 1 cup fresh or frozen ube, peeled and mashed
  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • ¼ cup melted butter (or coconut oil)

Instructions

  1. If using fresh ube, wash, peel, and steam until tender, about 20 minutes. Mash until creamy. If using frozen, thaw and mash.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine mashed ube, milk, eggs, and melted butter. Mix until smooth.
  4. Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Preheat your waffle iron and grease it if needed.
  6. Pour the recommended amount of batter into your waffle iron and cook until golden and crispy, about 5–7 minutes.
  7. Serve warm with toppings like fresh fruit, whipped cream, or maple syrup.

Notes

For a dairy-free version, substitute milk with almond or coconut milk and butter with coconut oil. Let the waffles rest after cooking for extra crispiness.
