Ingredients

- 1 cup fresh or frozen ube, peeled and mashed
- 1 ½ cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk (dairy or non-dairy)
- 2 large eggs
- ¼ cup melted butter (or coconut oil)
Instructions
- If using fresh ube, wash, peel, and steam until tender, about 20 minutes. Mash until creamy. If using frozen, thaw and mash.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine mashed ube, milk, eggs, and melted butter. Mix until smooth.
- Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined.
- Preheat your waffle iron and grease it if needed.
- Pour the recommended amount of batter into your waffle iron and cook until golden and crispy, about 5–7 minutes.
- Serve warm with toppings like fresh fruit, whipped cream, or maple syrup.
Notes
For a dairy-free version, substitute milk with almond or coconut milk and butter with coconut oil. Let the waffles rest after cooking for extra crispiness.
