  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the ube by steaming or boiling until tender and mashing or blending into a smooth puree.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and cinnamon.
  3. In another bowl, whisk the eggs, milk, melted butter, vanilla extract, and ube puree until smooth.
  4. Combine the wet and dry ingredients, stirring gently until just combined.
  5. Preheat your waffle iron and lightly grease it with cooking spray or butter.
  6. Pour about ½ to ¾ cup of batter into the preheated waffle iron and cook until golden brown (usually 4 to 5 minutes).
  7. Serve warm with maple syrup, fresh berries, or whipped cream.
