- 1 cup ube puree (fresh, canned, or frozen)
- 1 ½ cups all-purpose flour (or gluten-free flour)
- 2 large eggs (or flaxseed eggs for vegan)
- 1 cup whole milk (or coconut milk)
- 1 tablespoon baking powder
- ¼ cup granulated sugar (or maple syrup)
- ¼ cup melted butter (or coconut oil)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Instructions
- Prepare the ube by steaming or boiling until tender and mashing or blending into a smooth puree.
- In a large bowl, whisk together the flour, baking powder, sugar, and cinnamon.
- In another bowl, whisk the eggs, milk, melted butter, vanilla extract, and ube puree until smooth.
- Combine the wet and dry ingredients, stirring gently until just combined.
- Preheat your waffle iron and lightly grease it with cooking spray or butter.
- Pour about ½ to ¾ cup of batter into the preheated waffle iron and cook until golden brown (usually 4 to 5 minutes).
- Serve warm with maple syrup, fresh berries, or whipped cream.
Notes
For perfect waffles, ensure a thicker batter and avoid overmixing. Keep cooked waffles warm in a low oven if making a large batch.
