- 4 thick, bone-in pork chops
- 2 sweet apples (like Granny Smith or Honeycrisp), sliced
- 1 onion, sliced thinly
- 2 tablespoons butter
- 1 cup apple cider
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 2 teaspoons fresh thyme or sage, chopped
Instructions
- Season the pork chops with salt and pepper. Heat butter in a skillet over medium heat and sear each chop for 2-3 minutes on each side until browned.
- Layer the sliced onions and apples in the bottom of the crock pot. Place the seared pork chops on top.
- Drizzle with apple cider and sprinkle with brown sugar, cinnamon, and chopped herbs.
- Cook on low for 6-8 hours or high for 3-4 hours until the pork is tender.
- In the last half hour, stir in a bit more butter and adjust seasoning as needed.
- Serve the pork chops with the cooked apples and sauce over the top.
Notes
For a lighter option, substitute chicken for pork; if apples aren’t in season, pear slices can be used.
