Ingredients

  • 4 large russet or Yukon Gold potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 46 cups beef broth or chicken broth
  • 2 large carrots, sliced
  • 2 stalks celery, chopped
  • ½ cup heavy cream
  • Salt, to taste
  • Black pepper, to taste
  • Fresh thyme or parsley, chopped

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked and no longer pink. Drain excess fat and transfer the meat to your crock pot.
  2. In the same skillet, sauté chopped onions and minced garlic until fragrant.
  3. Add the sautéed vegetables to the crock pot with the browned beef, followed by diced potatoes, sliced carrots, and chopped celery.
  4. Pour in enough broth to cover everything — usually about 4-6 cups.
  5. Add herbs, salt, and pepper. Stir to combine all the flavors before closing the lid.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
  7. About 30 minutes before serving, stir in heavy cream. Adjust seasoning if needed.
  8. Once done, ladle into bowls and garnish with fresh herbs. Serve warm with crusty bread.

Notes

To enhance flavors, let the soup cool in the crock pot for a few hours after cooking before serving.
