- 1 lb ground beef
- 4 large russet or Yukon Gold potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4–6 cups beef broth or chicken broth
- 2 large carrots, sliced
- 2 stalks celery, chopped
- ½ cup heavy cream
- Salt, to taste
- Black pepper, to taste
- Fresh thyme or parsley, chopped
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked and no longer pink. Drain excess fat and transfer the meat to your crock pot.
- In the same skillet, sauté chopped onions and minced garlic until fragrant.
- Add the sautéed vegetables to the crock pot with the browned beef, followed by diced potatoes, sliced carrots, and chopped celery.
- Pour in enough broth to cover everything — usually about 4-6 cups.
- Add herbs, salt, and pepper. Stir to combine all the flavors before closing the lid.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in heavy cream. Adjust seasoning if needed.
- Once done, ladle into bowls and garnish with fresh herbs. Serve warm with crusty bread.
Notes
To enhance flavors, let the soup cool in the crock pot for a few hours after cooking before serving.
