Ingredients

  • 1 lb ground beef
  • 4 large potatoes, peeled and chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 cup cream or milk
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • Salt, to taste
  • Pepper, to taste
  • Your favorite herbs (thyme, rosemary, paprika), to taste

Instructions

  1. Prep the ingredients: peel and chop potatoes, dice the onion, and mince the garlic.
  2. Sauté the ground beef in a skillet over medium heat with salt and pepper until browned. Drain excess grease.
  3. Layer the crockpot with sautéed beef, chopped potatoes, diced onion, minced garlic, and any additional veggies.
  4. Pour in enough broth to cover all ingredients.
  5. Stir in the cream or milk.
  6. Sprinkle in herbs and spices, adjusting to taste.
  7. Cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
  8. Before serving, taste and adjust seasoning if needed. Garnish with parsley or cheese if desired.

Notes

For a healthier option, substitute ground beef with turkey or sausage. This soup also freezes well for future meals.
