- 1 lb ground beef
- 4 large potatoes, peeled and chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 cup cream or milk
- 1 cup carrots, chopped
- 1 cup celery, chopped
- Salt, to taste
- Pepper, to taste
- Your favorite herbs (thyme, rosemary, paprika), to taste
Instructions
- Prep the ingredients: peel and chop potatoes, dice the onion, and mince the garlic.
- Sauté the ground beef in a skillet over medium heat with salt and pepper until browned. Drain excess grease.
- Layer the crockpot with sautéed beef, chopped potatoes, diced onion, minced garlic, and any additional veggies.
- Pour in enough broth to cover all ingredients.
- Stir in the cream or milk.
- Sprinkle in herbs and spices, adjusting to taste.
- Cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
- Before serving, taste and adjust seasoning if needed. Garnish with parsley or cheese if desired.
Notes
For a healthier option, substitute ground beef with turkey or sausage. This soup also freezes well for future meals.
