Description

A comforting and flavorful crockpot meatloaf that brings family together with its savory and sweet blend, perfect for any occasion.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp Italian herbs (oregano, basil)
  • 2 tbsp Worcestershire sauce
  • 1/2 cup ketchup
  • 2 tbsp brown sugar

Instructions

  1. In a large bowl, combine ground meat, breadcrumbs, chopped vegetables, eggs, and all seasonings. Mix gently until incorporated.
  2. Shape the mixture into a loaf and place it into a greased crockpot.
  3. In a small bowl, whisk together ketchup and brown sugar, then spread it over the top of the meatloaf.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours.
  5. Check the internal temperature reaches 160°F. Optionally, broil for 5-10 minutes for a crispy exterior.
  6. Let the meatloaf rest for 10-15 minutes before slicing.

Notes

For a lighter option, substitute ground beef and pork with ground turkey or chicken. You can also use a flaxseed meal mixed with water instead of eggs for a vegan alternative.
