- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tsp Italian herbs (oregano, basil)
- 2 tbsp Worcestershire sauce
- 1/2 cup ketchup
- 2 tbsp brown sugar
Instructions
- In a large bowl, combine ground meat, breadcrumbs, chopped vegetables, eggs, and all seasonings. Mix gently until incorporated.
- Shape the mixture into a loaf and place it into a greased crockpot.
- In a small bowl, whisk together ketchup and brown sugar, then spread it over the top of the meatloaf.
- Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours.
- Check the internal temperature reaches 160°F. Optionally, broil for 5-10 minutes for a crispy exterior.
- Let the meatloaf rest for 10-15 minutes before slicing.
Notes
For a lighter option, substitute ground beef and pork with ground turkey or chicken. You can also use a flaxseed meal mixed with water instead of eggs for a vegan alternative.
