- Boneless chicken (breast or thighs)
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 onion, chopped
- 2 bell peppers, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup sweet corn
- Crispy tortilla strips for topping
- Sliced avocado for topping
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Prepare your ingredients by chopping the onion, bell peppers, and garlic.
- In a large skillet over medium heat, sauté the onion, garlic, and bell peppers until softened, about 5 minutes.
- Add the cooked vegetables to the crockpot along with the chicken, canned tomatoes, black beans, corn, and spices. Pour in the broth and mix well.
- Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours until the chicken is tender and shreddable.
- About 30 minutes before serving, shred the chicken directly in the pot.
- Serve hot, garnished with tortilla strips, avocado slices, cilantro, and a squeeze of lime.
Notes
Feel free to substitute chicken with shredded turkey or plant-based protein. Adjust the spice level to personal preference.
