- 2 bell peppers (red, yellow, or green), diced
- 1 onion, diced
- 1 cup corn (fresh or frozen)
- 2 cups diced tomatoes (fresh or canned)
- 1 can black beans, rinsed and drained
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 2 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
- Crispy tortilla strips, for serving
Instructions
- Prep your vegetables: Dice the onions and peppers. Mince the garlic if using fresh.
- Layer the ingredients in the crockpot, starting with the heartier vegetables and ending with softer ones like corn and tomatoes.
- Cover the pot and set the slow cooker on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in fresh cilantro and lime juice.
- Taste before serving and adjust seasoning if needed.
