Ingredients

- 1 head Green Leaf or Romaine Lettuce, chopped
- 1 cup Bell Peppers, diced (mixed colors)
- 1 Cucumber, sliced
- 1 cup Grape Tomatoes, halved
- 1/2 Red Onion, thinly sliced
- 1/2 cup Toasted Nuts (Almonds, Walnuts, or Pecans)
- 1/4 cup Fresh Herbs (Parsley, Basil, or Cilantro)
- 1/4 cup Olive Oil
- 2 tbsp Vinegar
- 1 tsp Dijon Mustard
- 1 tsp Honey
- Salt and Pepper, to taste
Instructions
- Prepare the Vegetables: Rinse and dry all the veggies. Chop lettuce into bite-sized pieces, dice the peppers, slice the cucumber, and halve the tomatoes. Thinly slice the red onion.
- Mix it Up: In a large bowl, combine the lettuce, bell peppers, cucumber, tomatoes, and onion. Toss gently.
- Prepare the Dressing: In a small bowl, whisk together olive oil, vinegar, Dijon mustard, honey, salt, and pepper. Adjust seasoning to taste.
- Combine: Drizzle the dressing over the salad just before serving and toss to coat.
- Garnish & Enjoy: Sprinkle nuts and fresh herbs on top before serving.
Notes
For best results, add dressing right before serving to keep the salad crunchy.
