Description

A vibrant and crunchy salad bursting with fresh vegetables and a tangy dressing, perfect for any meal or gathering.


Ingredients

  • 1 head Green Leaf or Romaine Lettuce, chopped
  • 1 cup Bell Peppers, diced (mixed colors)
  • 1 Cucumber, sliced
  • 1 cup Grape Tomatoes, halved
  • 1/2 Red Onion, thinly sliced
  • 1/2 cup Toasted Nuts (Almonds, Walnuts, or Pecans)
  • 1/4 cup Fresh Herbs (Parsley, Basil, or Cilantro)
  • 1/4 cup Olive Oil
  • 2 tbsp Vinegar
  • 1 tsp Dijon Mustard
  • 1 tsp Honey
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Vegetables: Rinse and dry all the veggies. Chop lettuce into bite-sized pieces, dice the peppers, slice the cucumber, and halve the tomatoes. Thinly slice the red onion.
  2. Mix it Up: In a large bowl, combine the lettuce, bell peppers, cucumber, tomatoes, and onion. Toss gently.
  3. Prepare the Dressing: In a small bowl, whisk together olive oil, vinegar, Dijon mustard, honey, salt, and pepper. Adjust seasoning to taste.
  4. Combine: Drizzle the dressing over the salad just before serving and toss to coat.
  5. Garnish & Enjoy: Sprinkle nuts and fresh herbs on top before serving.

Notes

For best results, add dressing right before serving to keep the salad crunchy.
