Ingredients

- 3 medium carrots, grated
- 2 tart apples (e.g. Granny Smith) or sweet apples (e.g. Fuji), sliced
- ½ cup Greek yogurt
- Juice and zest of 1 large orange
- 1 tablespoon honey
- Pinch of salt
- ½ cup chopped walnuts or sunflower seeds (optional)
Instructions
- Wash and peel the carrots if desired, then grate them.
- Core and thinly slice the apples, keeping the skin on for color.
- In a bowl, mix Greek yogurt, orange juice and zest, honey, and salt until smooth.
- In a large bowl, combine carrots and apples, then add the dressing and toss to coat.
- If desired, sprinkle nuts or seeds on top for added crunch.
- Let the salad rest for 15 minutes before serving.
Notes
For a vegan option, swap Greek yogurt for dairy-free sour cream. Avoid dressing the salad too early to maintain its crunch.
