  • 4 tortillas (flour or whole wheat)
  • 8 slices of thick-cut bacon
  • 2 cups cooked chicken, diced
  • 1/2 cup ranch dressing
  • 1 cup romaine lettuce, chopped
  • 1 cup diced tomatoes
  • 1/2 cup red onions, thinly sliced
  • 1/2 cup bell peppers, sliced
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced or smashed
  • Fresh herbs (cilantro or parsley), optional

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel to absorb excess grease.
  2. In the same skillet, heat olive oil and sauté the cooked chicken until warmed through. Season lightly with salt and pepper.
  3. Wash and chop the fresh veggies into even sizes.
  4. Lay out the tortillas and spread a generous dollop of ranch dressing. Layer crispy bacon, warm chicken, fresh veggies, cheese, and herbs.
  5. Fold the sides of the tortilla over the filling, then roll it tightly. Secure with a toothpick if needed.
