- 1 tablespoon curry powder

Instructions
- Prepare the ingredients: Chop chicken into bite-sized pieces and dice vegetables.
- Cook the chicken: In a large skillet over medium heat, add vegetable oil. Add chicken, season with salt and pepper, and sauté until browned (5-7 minutes). Remove and set aside.

- Cook the rice: Prepare rice according to package instructions.
- Finish with herbs and lime: Stir in cilantro and lime juice before serving.
- Serve: Ladle over rice and garnish with lime wedges and cilantro.
