Instructions

  1. Prepare the ingredients: Chop chicken into bite-sized pieces and dice vegetables.
  2. Cook the chicken: In a large skillet over medium heat, add vegetable oil. Add chicken, season with salt and pepper, and sauté until browned (5-7 minutes). Remove and set aside.
  3. Sauté the aromatics: Add onion, garlic, and ginger to the skillet and sauté until fragrant (2-3 minutes).
  4. Add spices and coconut milk: Stir in curry powder for about a minute, then add coconut milk and broth.
  5. Combine everything: Return chicken to skillet along with vegetables. Simmer for 15-20 minutes until chicken is cooked and sauce thickens.
  6. Cook the rice: Prepare rice according to package instructions.
  7. Finish with herbs and lime: Stir in cilantro and lime juice before serving.
  8. Serve: Ladle over rice and garnish with lime wedges and cilantro.
