- 8 oz Dark Chocolate (70% cocoa or higher)
- 1 cup Heavy Cream
- 3 large Eggs
- 1/2 cup Granulated Sugar
- 1 tsp Peppermint Extract
- 1 Pie Crust (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C). Prepare your pie crust and bake it for 10 minutes until slightly golden, then let it cool.
- In a heatproof bowl, melt the dark chocolate over simmering water. Allow it to cool slightly. Whip the heavy cream until soft peaks form. Beat the eggs and granulated sugar until thick and pale.
- Fold the melted chocolate into the egg mixture, then gently incorporate the whipped cream and peppermint extract.
- Pour the mousse into the cooled tart crust and chill in the refrigerator for at least 4 hours.
- Once set, garnish with cocoa powder or whipped cream and crushed peppermint candies before serving.
Notes
For a dairy-free version, substitute heavy cream with coconut cream and use silken tofu instead of eggs. Adjust peppermint extract to taste.
