- 1 1/2 cups pumpkin puree (fresh or canned)
- 8 oz dark chocolate (60-70% cocoa)
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1 tart crust (homemade or store-bought)
Instructions
- Preheat the oven to 350°F (175°C).
- If making your crust, mix flour, sugar, and a pinch of salt, cut in chilled butter until it resembles coarse crumbs, then add ice water gradually until it holds together. Press into a tart pan and bake blind for 15 minutes.
- As the crust cools, melt the dark chocolate over a double boiler or in the microwave until smooth.
- In a mixing bowl, whisk together fresh pumpkin puree, eggs, brown sugar, granulated sugar, melted chocolate, and spices.
- Pour the filling into the prepared crust and smooth it out evenly.
- Bake for about 30-35 minutes until the filling is set but still slightly wobbly in the center.
- Allow the tart to cool before serving.
- Optional: Sprinkle sea salt and serve with freshly whipped cream or vanilla ice cream.
