  • 8 oz dark chocolate (60-70% cocoa)
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1 tart crust (homemade or store-bought)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If making your crust, mix flour, sugar, and a pinch of salt, cut in chilled butter until it resembles coarse crumbs, then add ice water gradually until it holds together. Press into a tart pan and bake blind for 15 minutes.
  3. As the crust cools, melt the dark chocolate over a double boiler or in the microwave until smooth.
  4. In a mixing bowl, whisk together fresh pumpkin puree, eggs, brown sugar, granulated sugar, melted chocolate, and spices.
  5. Pour the filling into the prepared crust and smooth it out evenly.
  6. Bake for about 30-35 minutes until the filling is set but still slightly wobbly in the center.
  7. Allow the tart to cool before serving.
  8. Optional: Sprinkle sea salt and serve with freshly whipped cream or vanilla ice cream.
