Ingredients

- 1 cup Medjool dates, pitted
- 1/2 cup nuts (almonds or pecans)
- 1/4 cup nut butter (almond or cashew)
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons coconut oil
- Pinch of salt
- 1 teaspoon vanilla extract
Instructions
- Pit the dates and soak in warm water for about 10 minutes.
- In a food processor, blend the softened dates, nut butter, cocoa powder, and coconut oil until smooth.
- Add chopped nuts and a pinch of salt, and pulse a few times to combine.
- Line a baking dish with parchment paper and press the mixture into the dish evenly.
- Refrigerate for at least an hour to set, then slice into bars.
- Serve chilled or at room temperature.
Notes
Store bars in an airtight container in the fridge for freshness. These bars can also be frozen for up to three months.
