Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt the unsalted butter in a medium saucepan over low heat and cool slightly.
  3. In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar, whisking until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. In another bowl, whisk together flour, baking soda, and salt; gradually add this to the wet mixture, stirring gently until combined.
  6. Fold in chocolate chips and toffee pieces, being careful not to overmix.
  7. Scoop rounded dough onto lined baking sheets, spacing them 2 inches apart.
  8. Sprinkle each cookie with a pinch of sea salt.
  9. Bake for 10-12 minutes or until edges are lightly golden; the centers will be slightly underbaked for a chewy texture.
  10. Cool on the tray for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra chewiness, chill the dough for 30 minutes before baking. You can also substitute gluten-free flour or coconut sugar if needed.
