Ingredients
Scale
- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1 cup toffee pieces
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Melt the unsalted butter in a medium saucepan over low heat and cool slightly.
- In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar, whisking until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt; gradually add this to the wet mixture, stirring gently until combined.
- Fold in chocolate chips and toffee pieces, being careful not to overmix.
- Scoop rounded dough onto lined baking sheets, spacing them 2 inches apart.
- Sprinkle each cookie with a pinch of sea salt.
- Bake for 10-12 minutes or until edges are lightly golden; the centers will be slightly underbaked for a chewy texture.
- Cool on the tray for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra chewiness, chill the dough for 30 minutes before baking. You can also substitute gluten-free flour or coconut sugar if needed.
