- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 2 cups cranberries (fresh or frozen)
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 325°F (160°C). In a bowl, mix cream cheese, granulated sugar, and sour cream until smooth. Add vanilla and eggs one at a time, mixing gently.
- Pour mixture into a springform pan lined with parchment. Bake for 45-50 minutes until edges set and center jiggles. Cool in the oven with door ajar for 1 hour.
- For cranberry mousse, in a saucepan, cook cranberries with a splash of water and sugar over medium heat until they burst. Cool and blend until smooth.
- Whip the heavy cream until soft peaks form, then fold in the cranberry puree.
- Spread the mousse over cooled cheesecake and chill in the refrigerator for at least 4 hours, preferably overnight.
- Remove from pan, garnish as desired, and serve.
Notes
Can be customized with toppings such as chocolate drizzle or chopped nuts. Store leftovers in the refrigerator for up to 5 days or freeze for up to 2 months.
