Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups cranberries (fresh or frozen)
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix cream cheese, granulated sugar, and sour cream until smooth. Add vanilla and eggs one at a time, mixing gently.
  2. Pour mixture into a springform pan lined with parchment. Bake for 45-50 minutes until edges set and center jiggles. Cool in the oven with door ajar for 1 hour.
  3. For cranberry mousse, in a saucepan, cook cranberries with a splash of water and sugar over medium heat until they burst. Cool and blend until smooth.
  4. Whip the heavy cream until soft peaks form, then fold in the cranberry puree.
  5. Spread the mousse over cooled cheesecake and chill in the refrigerator for at least 4 hours, preferably overnight.
  6. Remove from pan, garnish as desired, and serve.

Notes

Can be customized with toppings such as chocolate drizzle or chopped nuts. Store leftovers in the refrigerator for up to 5 days or freeze for up to 2 months.
