Instructions

- Add the pistachio paste and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped pistachios.
- Using a tablespoon or cookie scoop, portion the dough onto parchment-lined baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
