Ingredients

- 1 package gingerbread mix
- 1/2 cup molasses
- 1/2 cup cream cheese
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup creamy chocolate (dark or white)
- Sea salt (for garnish)
Instructions
- In a mixing bowl, combine the gingerbread mix, molasses, cream cheese, and spices. Blend until cohesive and slightly tacky.
- Roll the mixture into tablespoon-sized balls and place on a parchment-lined baking sheet. Refrigerate for 30 minutes to firm up.
- Melt the chocolate in a double boiler or microwave until smooth.
- Dip each truffle in the melted chocolate, allowing excess to drip away. Place back on the baking sheet and sprinkle with sea salt.
- Let truffles set at room temperature or refrigerate until chocolate is firm.
Notes
For added crunch, consider rolling the truffles in crushed nuts or coconut before the chocolate hardens. Store leftovers in an airtight container for up to two weeks.
