Instructions
- Preheat oven to 325°F (163°C).
- Blend flour, butter, and sugar to make the sugar cookie crust; ensure no dry flour remains.
- Press the dough into a 9-inch springform pan and bake for 15-18 minutes until lightly golden.
- In a separate bowl, beat cream cheese, granulated sugar, and vanilla until smooth; add eggs one at a time, then fold in sour cream.
- Pour cheesecake filling over the cooled crust; bake for 50-60 minutes until slightly jiggly.
- Cool in the oven with the door cracked for an hour, then refrigerate for at least four hours.
