Instructions
- Preheat your oven to 200°F (95°C) and line a baking sheet with parchment paper.
- In a clean, dry bowl, beat the egg whites on medium speed until frothy. Gradually add the sugar while increasing the speed to high, beating until stiff peaks form, about 5–7 minutes.
- Gently fold in the peppermint and vanilla extracts along with the cornstarch.
- Using a piping bag fitted with a star tip, pipe small mounds onto the prepared baking sheet.
- Bake for about 1.5 hours until dry to the touch. Turn off the oven and let meringues cool inside.
- Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Drizzle the chocolate over the cooled meringues and allow to set before serving.
