- 4 firm apples (Granny Smith or Honeycrisp)
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Zest of 1 lemon
- 2 tbsp butter, melted
- 1/4 cup brown sugar (optional)
- Additional cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and core the apples, being careful not to cut all the way through.
- In a bowl, mix softened cream cheese, sugar, vanilla, cinnamon, and lemon zest until smooth.
- Stuff each apple generously with the cheesecake mixture.
- Melt butter in a skillet and combine with brown sugar and cinnamon, then drizzle over the stuffed apples.
- Place apples in a baking dish with a splash of water and bake for 25-30 minutes until tender and bubbly.
- Serve warm, optionally with vanilla ice cream.
