- 1 package cornbread mix
- 1 can creamed corn
- 1 can whole kernel corn
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Fresh herbs (optional, like parsley or chives)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cornbread mix, creamed corn, whole kernel corn, shredded cheese, eggs, and melted butter. Season with salt, pepper, and garlic powder, then stir until just combined.
- Lightly grease a 9×13 inch baking dish with butter or cooking spray.
- Pour the mixture into the baking dish and spread it evenly.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes, then cut into squares and serve warm.
Notes
For extra flavor, add cooked bacon or sautéed vegetables. Broil for 3 minutes at the end for a crispy top.
