- 1 cup chopped vegetables (onion, bell peppers, and optional leafy greens)
- 1 cup cheese (optional)
- Herbs (thyme, garlic powder, to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt some butter over medium heat. Add chopped onions and bell peppers; sauté until softened, about 5-7 minutes.
- In a large bowl, stir together cornmeal, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, milk, and melted butter until well combined.
- Pour the wet mixture into the dry ingredients, stirring until just moistened.
- Fold in the sautéed vegetables and any optional cheese or herbs.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Bake for 30-35 minutes, or until golden and a toothpick inserted in the center comes out clean.
- Cool slightly before serving.
