- 1 package cornbread mix
- 1 cup fresh corn (or canned/frozen)
- 1 cup mushrooms (cremini or button), chopped
- 1 small onion, diced
- 1 cup cheddar or pepper jack cheese, shredded
- 2 eggs
- 1 cup milk
- Herbs (such as thyme or parsley)
- 2 tablespoons butter for sautéing
Instructions
- Preheat your oven to 350°F (180°C) and grease a casserole dish.
- In a skillet, melt 2 tablespoons of butter and sauté the diced onion and chopped mushrooms over medium heat for 5-7 minutes until tender and golden.
- Prepare the cornbread mix according to package directions in a large bowl and fold in the sautéed vegetables, corn, and 1 cup of shredded cheese.
- Whisk together the eggs and milk and incorporate into the cornbread mixture until well combined.
- Pour the mixture into the greased casserole dish, sprinkle the remaining cheese on top, and bake for 30–35 minutes or until golden and a toothpick comes out clean.
- Let the casserole rest for 10 minutes before serving.
