  • 2 eggs
  • 1 cup milk
  • Herbs (such as thyme or parsley)
  • 2 tablespoons butter for sautéing

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a casserole dish.
  2. In a skillet, melt 2 tablespoons of butter and sauté the diced onion and chopped mushrooms over medium heat for 5-7 minutes until tender and golden.
  3. Prepare the cornbread mix according to package directions in a large bowl and fold in the sautéed vegetables, corn, and 1 cup of shredded cheese.
  4. Whisk together the eggs and milk and incorporate into the cornbread mixture until well combined.
